There’s nothing quite like a summer’s night barbeque—so we’re going to make the most of this last <gasp!> weekend of the season. We’ve got your crowd-pleasing Labor Day menu all set, thanks to the blog Week Nights Only (a.k.a. our own Christina Henderson), a recipe collective created in Princeton, NJ.
The mission: to collect and share go-to recipes for slam-dunk weeknight dinners. The criteria for each recipe submitted and accepted to the site—which spotlights original works of culinary arts or chef-credited—is that it must have earned a top spot on the sender’s greatest hits list, and many times includes added tips and tricks from the home cook for preparing the dish, as well.
But don’t let the name fool you; all of the recipes are weekend-worthy, too. We’ve combed through the W.O. recipe archive for the perfect spread to celebrate this holiday weekend: Grilled Brie (All Things Yum), Spinach Artichoke Pasta Salad (Rachael Ray), Lemon Pepper Grilled Chicken (Dinner A Love Story), and Perfect Corn on the Cob. If you’re looking for a killer app to bring along to a picnic, bake up some pigs and blankets, inspired by our favorite foodie read of the summer, Mary Guiliani’s Tiny Hot Dogs: A Memoir in Small Bites. And for dessert, we say keep it simple and sublime with a specialty ice cream pie from Pennington’s Uncle Ed’s Creamery or the always iconic s’mores (for a creative take on the summertime dessert staple, check out The Midnight Baker’s baked version).
